Ingredients

Cake
  • 6 medium to large tangerines peeled and deseeded
  • Juice of one lemon
  • 250g Blyss Monkfruit Icing
  • 200g Blyss Monkfruit Sweetener
  • 4 eggs
  • 1.5 cups (200g) blanched almond flour
  • 1 tsp baking powder
  • 2 tbs salted butter
Frosting
  • 200g cream cheese
  • 100g greek yoghurt
  • 2 tbsBlyss Monkfruit Icing Sweetener

Flourless Tangerine Cake

For those time when the wanders to something satisfyingly tangy with a touch of sweet. Keto, low-carb and fantastic.

Directions:
  1. Cook peeled, deseeded tangerines with 200g Blyss Monkfruit Sweetener, stirring to prevent burning, for 15 min until reduced and pulpy.
  2. Preheat oven to 180°C/350°F. Whisk 4 eggs with Blyss Icing Sweetener until fluffy, then blend in baking powder, softened butter, and almond flour.
  3. Pour into a 9-inch silicone baking pan and bake for 1 to 1.5 hours, until a stick comes out clean.
  4. Whip cream cheese with yogurt and Blyss Icing for topping.
  5. Drizzle the tangerine liquid over the cake, optionally adding a teaspoon of rum.
  6. Sift Blyss icing sugar over the cake and enjoy with Earl Grey tea.
