How is our green tea produced?
Making of our quality sencha green tea starts with plantations in Yame city of Japan, which is on Kyushu Island, known for the pristine growing conditions, with abundant natural rain, high temperatures during daytime and low temperatures in the night. These are ideal conditions for tea plantations. The primary cultivar of our green tea is 'Yabukita', which is the most popular green tea in Japan. Young, supple and early season tea leaves are plucked by hand (not machine harvested). The leaves are immediately steamed to prevent oxidation. Yame tea leaves are steamed for about 40 seconds (not too short or long time, hence called Chumushi), which gives the tea a perfect balance of light, refreshing aroma and umami taste, and golden, yellowish green colour when brewed. The tea leaves then go through medium rubbing and rolling, and then dried. This creates needle-like shape of the loose tea leaves, which open when brewed, releasing the refreshing aroma and balanced taste.
