By utilizing Miyama Nishiki and its premium sake rice cultivated by our own research institute, we craft a smooth and crisp sake. All ingredients are sourced from the Shonai region and harvested by our contracted farmers. From the water to the milling process to the brewing, we maintain a precise production framework to create a "sake that you can see the face of the producer" with every bottle. A deep sharp citrus-like acidity.           A slightly reserved nose lends itself to an expansive rustic flavour.  A clean sake with a good balance of acidity that pairs well with all type of food.
