How To Use

Serving suggestions: our Refried Beans with smoky Chipotle chillies are delicious as a side dish or added as a flavourful layer to whatever you’re making.

They couldn’t be easier to make – simply tear open, heat in the microwave and eat!

Store in a cool dry place. Once opened keep refrigerated and use within 2 days.

The inspiration for Gran Luchito came from our founder and El Capitan Fergus. He travelled around vibrant and colourful Mexico on a trip of a lifetime and was blown away by the authentic flavours and ingredients of the food he enjoyed.

Fergus decided to create a brand that would deliver the authentic taste of Mexico.

Vegetarian Quesadilla

Ingredients: 4 Gran Luchito Street Taco wraps, 1 diced medium tomato, 1 tbsp Gran Luchito Green Serranos,3/4 cup grated manchego cheese or vegan cheese if required, 1/2 diced red onion, 1/2 pack of Gran Luchito Refried Beans, 1/2 medium diced yellow bell pepper, coriander

Directions:

1. Add diced onion, tomato and pepper to a mixing bowl with Green Serranos. Toss to combine.

2. Add Refried Beans to a large pan, heat through as per packet guidelines.

3. Divide Refried Beans evenly between Street Taco wraps.

4. Divide the diced vegetables and Green Serranos evenly between Street Taco wraps, covering one half of each.

5. Top the vegetables with a scattering of grated cheese and fresh coriander.

6. Heat a griddle pan over a medium/high heat. Fold the wraps in half and place on the hot griddle. Cook 2-3 minutes on both sides until char lines appear and cheese has melted.

7. Repeat with remaining Street Taco wraps. Serve with guacamole and Chipotle Salsa.

Ultimate Chicken Nachos

Ingredients: 1 bag Gran Luchito Lightly Salted Tortilla Chips, 2 chicken breasts, 1/2 tub of Smoky Chipotle Fajita and Taco Mix, 3 tbsp olive oil, Gran Luchito Smoky Chipotle Refried Beans, 250g cheddar cheese, 250ml Sour cream, guacamole, coriander, 1 jar Chipotle Salsa, 3 Radishes, 3 Limes, handful Green Serranos

Directions:

1. Preheat oven to 175C.

2. Mix 1/2 tub of Gran Luchito Smoky Chipotle Fajita and Taco Mix with 2tbsp olive oil & juice of 1 lime, cover chicken and leave for 15 mins.

3. Add chicken to hot pan and fry until cooked through. Cut into small cubes.

4. In a roasting tin, cover half a pack of Gran Luchito Tortilla Chips with half the grated cheese then top with the remaining tortillas, followed by the other half of cheese. Place in the oven and leave until melty and delicious (10 minutes).

7. Layer nachos with chicken, guacamole, sour cream, Refried Beans, Chipotle Salsa, sliced red onion, coriander, Green Serranos and sliced radish. Serve with lime wedges.

Vegetarian Fajitas

Ingredients: 2 portobello mushrooms, 1 small red, yellow and green bell pepper sliced, 1 small red onion thinly sliced, 1 small courgette sliced into half moons, 2 tsp Smoky Chipotle Fajita and Taco Mix, 2 tbsp of olive oil, juice of half a lime 8 Street Taco wraps, sour cream for vegetarian or coconut milk yogurt for vegan, guacamole, coriander

Directions:

1. To prepare the vegetable fajita filling, add the sliced vegetables to a large mixing bowl with the Smoky Chipotle Fajita & Taco Mix, lime juice and oil. Mix well to coat the vegetables in the seasoning.

2. Add to a large frying pan over a medium heat and stir fry for 5-6 minutes until vegetables are tender.

3. Warm Refried Beans as per directions.

4. Warm Street Taco wraps. Spread a generous helping of the refried bean mixture over the base of each wrap and top with the cooked vegetables and guacamole. Scatter with fresh coriander and serve with sour cream or coconut yogurt.
