Tsubame Sanjo Sanjo Santoku knife made from VG-10 steel.
Although the VG-10 knife tends to be relatively high, it was the perfect knife for the first one with a balance between price and quality.
The blade core material is made of 10 V gold material made by Takefu special steel, and the side material is made of rust-resistant 13 chrome stainless steel.
The relatively cheap reason for knives made of steel is that the plate thickness has been reduced to a level of thickness (0.06 inch (1.5 mm) board thickness.
The advantage of achieving a thin knife with a thickness of 0.06 inch (1.5 mm) of steel with a thickness of 0.06 inch (1.5 mm) is lightness, good handling, and good cutting. All of them are necessary elements for home use.
Disadvantage Not strong and durable. You won't be able to cut through the weight of the knife itself.
Among these things are somewhat contradictive in terms of durability, but due to thinner steel material, they are ground and polished to a thick knife shape and finished with a slightly dull blade. In that case, the "thinness" is not durable and has no bad blade retention.
The laminated reinforced wood on the handle combines the good qualities of wood and resin, and it has very little deterioration. Subdued matte texture

The blade length is 6.5 inches (16.5 cm), and is the size of a regular santoku knife. It weighs 4.1 oz (110 g) and is very light compared to the same size knives. It focuses on better handling than a heavy texture.
You can also sharpen it with a simple sharpener. However, by regularly grinding with a whetstone, the blade stays sharp.
The blade and handle are made with rivets that will not fall off.

About V Gold 10 Material
The V-gold 10 manufactured by Takefu special steel is reinforced with 15% chrome (Cr), 1% molybdenum (Mo), and 1.5% cobalt (Co) to achieve high hardness and further increase the longevity of the blade. With the addition of vanadium (V) to microfie the tissue, these elements of Cr, Mo, V are made of a large amount of hard carbide, resulting in improved wear resistance. Excellent sharpening performance and easy blade sharpening. The V Gold 10 is also ideal for cutting blades that require surface coating treatments because it appears a secondary hardening at high temperatures. Excellent corrosion resistance and sharpness for a wide range of uses, from knives to machinery knives.
About Laminated Reinforced Wood
The veneer is made of wood that penetrates phenolic resin and is made from a high pressure heated to a plywood. It has excellent strength, water resistance, and durability, and is also used for precision mechanical parts, and is made of wood yet resistant to moisture and water repellency. In addition, the texture of the wood has a good texture, and it is easy to fit in your hand.
