Country Trading Co. is a small family business; we know one end of a kitchen from the other. We make everything from scratch, and back in 2012, we started making cheese and developing cheese making kits and supplies.

We researched cheesemaking equipment and designed a range of cheese tools for home cheesemakers, including a cheese press, cheese thermometer, cheese maturing boxes, and cheese mat. We wrote a range of books on cheesemaking to go with our cheese kits, testing recipes from feta cheese to camembert, and blue cheese until we were happy with the results.

We started the Culture Cupboard brand in 2016 to make high-quality thermophilic and mesophilic cheese starter cultures and rennet for home cheese makers.

The book with this cheese kit is our 9th book on how to make food from scratch. These fresh cheeses are the ones we make most often in our kitchen, and the recipes include all our tips and tricks for success.
